An offset smoker is a grill which grills food at low temperature in a controlled, smoky environment. The smoker consists of 2 compartments: the main cooking compartment and a firebox compartment. The main cooking compartment is a long-grated, metal box with porcelain-coated cooking grates and a lift door built with a smokestack. Picking your wood type & size
There are a few types of wood selection to choose from such as Hickory, Mesquite, Apple, and Cherry. Different type of woods are suited for different type of food.
Hickory and mesquite produce a more distinct and strong taste which are more suitable for meat while apple and cherry produce a delicate flavor which are more suitable for fish and vegetables.
For the wood sizes, there are wood chucks and wood chips to consider. Wood chucks are generally used for long cooks. You can add one or two chucks at the start of the cooking cycle, leaving you with desirable smoking over time. If you are going for short cooks, wood chips are better as they burn and smokes quicker than wood chucks.
Choosing your delivery method
You can use a smoker packet to put your wood chucks or chips. Fold a square packet using heavy-duty aluminum foil and put a fist full of wood chips/a piece of wood chuck in the center. Completely close the foil around the chips and then poke a few holes in the top with a fork to allow the smoke to escape the packet.
If you have been smoking your food often, you can consider investing in a smoker box. A smoker box is a metal wood chips container that has holes for the smoke to go through. It also protects wood chips from direct contact with fire.
Tips and precautions while smoking
Many people soak their wood chips for half an hour before they smoke it. This helps to prevent the wood from catching fire while burning fast. Wet wood takes longer to smoke. If you put chips in a pan of water, you’ll see steam before you see any smoke. Alternatively, you can switch to wood chucks as they do not need to be soaked before use.
If you are smoking food which has to take several hours such as pork ribs, it is recommended to add a new smoker pack with a handful of wood every 30 minutes. Two to three handfuls of wood chips will smoke for about an hour. While you have an urge to lift the lid to check on the food, try to reduce frequent checks as it may extend the cooking time. A good way to reduce lifting the lid is to use a food thermometer to check the internal temperature before serving smoked meats. You can start by checking on meats which are at room temperature before placing them on the smoker.

You may be wondering why we can’t use our grill right away after fixing it up. Similar to any new products which are just out of factories, your new grill may have residual paint, manufacturing oils, or metal shavings on it. These harmful substances may be left on your food while grilling. Hence, it’s a safety precaution to ensure that your grill is seasoned.
Seasoning the grill is the process of heating and oiling the grates to keep your grill operating at its best. It will also sterilize your grill and burn off impurities. The oil protects the grates from getting rust and making cleaning an easier job after every use.
When you see your food starts sticking or rust forming on the grates, it’s time to season your grill. It’s ideal to season your grill every few months even though you may not be using it often. This will prevent rust formation and maintaining its non-stick seasoned coating on your grates for every usage.

]]>Before you get started with the sizzling part, we’d like to share with you the important details about your gas grill because, safety first.
You may have already know, most of our Char-Broil BBQ gas grill have a built-in igniter button for convenient and speedy start-ups. For some very unlikely case when the igniter didn’t work, you can still light the gas grill manually.
If you had done this before, that’s awesome! Otherwise, follow these simple steps and save your barbecue.
How to light your gas grill manually?
Step 1:
Open the gas grill lid. If the gas has been turned on with a closed lid, turn off the gas and wait a few minutes for it to dissipate first.
Step 2:
Locate the lighting hole on the side of the grill and a match holder that hangs on a chain under the grill. Put a match in the coiled end of the match holder before lighting it.
Step 3:
Turn on the gas burner nearest to the lighting hole and place the lit match down through the grilling grates to ignite. You should see the flame on first burner.
Step 4:
Light the burner next to it by turning on the burner knobs, starting from left to right. After all the desired burners are lit, you can use start using it. In the event if any of the burner fail to spark, turn all burner knobs to “OFF” and wait for few minutes before making a second attempt.
Warning!
Do not attempt to light the gas grill when the lid is closed.
Do not lean over when lighting up the grill.
Keep children and pets away from grill when it’s in use.

You finally bought the perfect gas grill, and you can’t wait to use it. But how do you fire it up for the first time? Gas grills are simple to use. Follow this guide on how to prep a gas grill for the first use.
Read Your Owner’s Manual. First things first. Before doing anything, be sure to carefully read your owner’s manual. No two grills are alike. Just because you may have mastered your old gas grill doesn’t mean that knowledge will translate to your new one. Follow the assembly instructions and all safety guidelines. If you’re new to grilling, the manual will help familiarize you with all of the grill’s features. Don’t do anything the manual doesn’t recommend.
Conduct a Leak Test. Test your gas grill for leaks often — at least any time it’s been unused for a while. This will ensure the connection to the propane tank or natural gas line is safe and that the hose is in good working order. If you discover a leak, don’t try to fire up those pork chops just yet. Determine the source of the leak and repair it.
Prep Your Grates. Seasoning, or oiling prevents rust from forming on your grill grates and makes them easier to clean.
Clean and Maintain Your Grill. Proper maintenance and cleaning will keep your grill performing for a long time. Taking a little time to deep clean your grill will pay off. Again, your owner’s manual is your best friend. Remember that maintenance and cleaning are just as important as cooking those delicious spareribs you’ve got marinating in the fridge.
